  11. Green Monster Fat Burner Soup
    Makes 2 bowls?     70 cal per bowl.

    2 Tbsp olive oil (for frying)
    3 garlic cloves crushed
    1 medium courgette
    1 medium leek
    2 cups of water
    1 tbsp low sodium veg stock
    half tsp black pepper
    100g spinach

    1) Fry courgette, leek & garlic for 8-10m. Add 2 cups boiling water, stock & pepper.
    2) Boil for 15m. Blend & bring back to simmer.
    3) Add spinach & simmer for 5m.

    *Keep zucchini skins on, for that's where a lot of the vitamins are & it increases fibre.
    *Multiply recipe, put into serving size containers & freeze , to always have some at hand.

  13. Oh, I like this! I don't have the ingredients and am staying away from the stores right now. So, I have kale in freezer to use for spinach, onions and crushed garlic to use for leeks, frozen chopped zucchini (not as good, I know), chicken stock cubes for the stock (again not as good as yours), and maybe some white beans to put in the mix and blend. EVOO and salt/pepper always on hand. A poor man's monster soup.
