Since instant oats get gluey when soaking overnight, maybe make the oatmeal as usual and refrigerate overnight to make the starch resistant. In the morning, add some milk or water and reheat until warm but not hot. Then add cinnamon powder, ground flax seed, Greek yogurt, chopped fresh fruit, chopped nuts or nut butter.
